Lapsang Souchong is a Black China Tea. This tea has been dried over pinewood fires and gains a smoky flavour.  With its high altitude and grown in the foot hills of Mount Wuyi this tea is naturally medium strength and the drying method gives it its flavour. This grade is a large leaf so has a longer infusion time. It is a popular tea today due to its depth of flavour and unqiue taste.

The story behind the flavour is that in the 17th Century during the Qing Era, when passage between the mountains was delayed because of huge armies passing through, they would speed up the drying process of the tea, on fires made with local pines, to make room for the armies that camped there.According to research Lapsang tea was the first tea in Chinese history, even before Keemun. Souchong refers to the fourth and fifth layers of the tea plant.
